This spring truffle is considered the "little cousin" of the White Truffle, due to their similarity in appearance, however, they are extremely different and clearly recognizable. It is a very delicate truffle, it has a shorter duration than other species, mainly due to the small size it reaches, in fact, most of the truffles collected vary from the size of a pea to that of a mandarin.
With a generally garlicky scent and a very strong taste, it has a smooth rind of variable colourations, from ocher yellow to brown-rust or orange and a dark red-brown gleba with coarse shaded white ocher veins.
Harvest period: from the 15th of January to the 15th of April
Use: it can be eaten both raw and cooked. Being endowed with a strong flavour, it is excellent in cooking sauces, in the preparation of pan-fried meats or for fillings.
